Turkey Bolognese

Give this supper staple a new spin with lean turkey mince. This recipe gives you 3 of your 5-a-day.

  1. Heat the oil in a large, deep-sided frying pan. Add the onion, garlic and carrots and fry for 5-10 minutes, until softened. Add the turkey mince and cook for 2 minutes, breaking up any lumps with a wooden spoon.
  2. Once the mince is browned all over, stir in the chopped tomatoes, tomato purée, dried herbs and sugar. Add the stock and wine (if using), and simmer, uncovered, on a low heat for 20 minutes. Add the spinach 5 minutes before the end of cooking time.
  3. Meanwhile, cook the pasta to pack directions. Drain and divide between 4 bowls. Top with the Bolognese sauce; serve with a scatter of the Parmigiano and freshly ground black pepper.


  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 carrots, peeled and diced
  • 500g pack extra-lean turkey breast mince
  • 90g carton chopped tomatoes
  • 2 tablespoons tomato purée
  • 1 teaspoon dried herbes de Provence
  • ½ tablespoon sugar
  • 1 beef stock cube by Sainsbury's, dissolved in 100ml of boiling water
  • 50ml red wine (optional)
  • 100g young leaf spinach
  • 350g Sainsbury's spaghetti
  • 40g  Parmigiano Reggiano, shaved
